We started notnuts in a small kitchen in Dubai with one quiet rule: if you can't read it, we won't put it in.

Snacking, for too long, has hidden behind emulsifiers, mystery flavors, and shortcuts. We wanted the opposite — California almonds whole, never broken; Belgian couverture tempered slowly; ceremonial Uji matcha from a fifth-generation family farm; and salt from the sea, not a lab.

We make every batch in our Dubai kitchen, by hand. We weigh the matcha. We watch the caramel. We taste every batch. It's slower than it should be. That's the point.
